No supermarket is without red tomatoes these days. I say red, not meaning ripe! I remember when I was at one of the restaurants I worked at in New York and we went up to one of our vegetable supplier's farm. He picked a ripe tomato for me right off the vine, that was still warm from the sun! I still remember the taste of that tomato to this day! That tomato is reflected in this meal.
