Cuba, the warmth of the people and the Latin flavours combine to make this place a true food adventure. After the Soviets cut off aid to the Cuban People in the 1990s, the island was racked with food shortages. Many home cooks started to run small private restaurants out of their houses. Their menus featured lovingly prepared dishes made from whatever ingredients the families could find. I would argue that some of the best food in Cuba is still served by those home cooks in their paladares today.
